Technically not a pea, this hearty legume is one of the most flavorful and savory of them all. Popular in Indian and Southern cooking, the “cowpea” has a long history in America. Great in salads like cowboy caviar or even as a hummus

Storage & Cooking

Store in a cool, dry place in an airtight container. Good for 2-3 years

For quicker cooking, soak overnight. Rinse then add 2 cups water to 2 cups peas. Bring to a boil then simmer for 2 hours.

Freezes well for up to 6 months
